What is a Biryani ?
Biryani is an intricate rice dish which is very popular in South Asia made with layers of curried meat and rice. This dish is loved by Indians and Pakistanis.

Tips:
1. A good Biryani should have separate but fully cooked rice.
2. Salt should be according to you taste
3. Cook on high flame till all water dries and oil clearly separates on sides of the pot.
4. It requires more oil for cooking.
5. Type of rice is important. I will recommend basmati rice.
Ingredients:
For the Rice:
- 2 cup of basmati rice
- 2 cup of water
- 2 to 3 cardamom powder
- 1 black cardamom powder
- 4 to 5 cloves
- 1 cinnamon stick
- 2 to 3 bay leaves
- 1 to 2 tsp salt
Biryani Masala:
- 3 large onions ( thinly sliced)
- 3 tomatoes ( chopped)
- 1/2 cup of ghee or oil
- 4 to 5 green chilies (slit)
- 1/2 fresh coriander leaves (chopped)
- 1/2 fresh mint leaves (chopped)
- 1 tsp comin seed
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup of milk
- a tiny pinch of saffron
- few fried onions for garnishing
- 2 to 3 tsp lemon juice
Spices for Biryani:
- 2 to 3 bay leaves
- 6 to 8 black peppercorns
- 6 to 8 Cloves
- 4 to 5 green cardamom powder
- 1inch cinnamon stick
For chicken marination:
- 1 kg chicken ( cut into small pieces)
- 1 cup of yogurt
- 2 tsp of ginger garlic paste
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp cumin powder
- salt according to taste
Instructions:
Preparing the rice:
1. Basmati rice should be soaked in water for about 30 minutes.
2. In a large pot take 4 to 5 cups of water add cardamom powder, black cardamom, cloves, cinnamon stick, leaves and salt then boil it.
3. Drain the soaked rice and then add it to the boiling water. cook it until the rice is 70to75% done. Drain the rice.
Marinating the chicken:
1. Take a large bowl, mix yogurt, ginger garlic paste, red chili powder, turmeric powder ,, garam masala, cumin powder and salt.
2. Then add the chicken pieces into the mixture and coat it well. marinate for atleast 1 to 2 hours or overnight for best results.
Preparing Biryani Masala:
1. Heat the oil or ghee in a large pot. Then add some sliced onions and fry them until they get golden brown.
2. Add then cumin seed and cinnamon stick and wait for a minute.
3. Add those chopped tomatoes and cook them until they become soft and oil began to separate.
4. Then green chilies, coriander powder, red chili powder, and garam masala. Mix them well.
5. Add the marinated chicken and cook it until the chicken becomes tender.
Layering of Biryani:
1. Take the pot of the cooked chicken then layer half of the cooked rice over the chicken.
2. Then sprinkle some chopped mint leaves and coriander with onions and saffron milk over the rice.
3. Drizzle one lemon over the top.
Final Cooking:
1. Cover the top of the pot with a tight fitted lid.
2. Cook (Dum ) on low heat for about 20 minutes
3. Remove from stove and let the biryani rest for 10 minutes before serving it.
Serving:
1. Gently mix the layers of biryani with the help of fork.
2. Serve the delicious biryani with raita, salad and whatever you like.
