Rasmalai recipe Pakistani

It is one of the most loved sweet dish in south Asia mostly loved by Indians & Pakistanis. This recipe is the very quick and effective to make a tasty and juicy Rasmalai. 



What is Rasmalai:

Rasmalai is a classic south Asian desert (originally from India) consisting of juicy cheese discs served with thickened milk. Rasmalai based on two words Ras & Malai. In Urdu Ras means Juice and Malai means Cream. This  is a popular delicacy in all south Asia and are easily available  in many sweet shops.

Ingredients:

For Rasmalai Balls ( chenna ):

  • 1 liter Milk
  • 2 tbs lemon juice or vinegar
  • 1 cup of sugar
  • 4 cups of water






For The Ras:

  • 1 liter Milk
  • 1/4 cup sugar ( according to taste)
  • 1/4 teaspoon cardamom powder
  • Few chopped pistachios and almonds
  • Few saffron strands
  • 1 tablespoon rose water




Instructions:

For making chenna:

1. Boil one liter milk in a heavy bottomed pan. Stir it continuously  to prevent it from sticking on the bottom of the pan.

2. When the milk is about to boil low the flame  then add lemon juice or vinegar. Stir gently until the milk completely curdles. Then separate it from the chenna.

3. Then pour the curdled milk into a cheese cloth strainer. Put it into cold to remove its acidic taste. Grab the clothes edges and squeeze out the extra (excess)  water. Dangle it for about 30 minutes.

4. After waiting for 30 minutes transfer the cheena into some pot or plate and knead it for 10 minutes then wait until it becomes soft. This step should be done carefully because it is crucial for rasmalai balls.

5. Make small portions of the kneaded chenna and give them the shape of smooth flat discs.



Cooking Rasmalai Balls:

1. Take a large pan put four cups of water and one cup of sugar and boil it.

2. Now gently  starts to add cheena  discs to the boiling sugar syrup. Cover it and let it cook on medium heat for about  15 minutes. The balls will fluff and be doubled in their size.

3. Turn off the flame and let the fluffy balls cooled down  in the syrup.



For Making Ras:

1. Take another pan put 1 liter of Milk and let it stew on low heat until it reduces to 3/4 of its original quantity. Stir it time to time to prevent it from burning.

2. Now add 1/4 cup of sugar, cardamom powder, few chopped nuts, few saffron strands. Stew them for another 5 to 10 minutes. you can also put some rose  water in the end if you want.

3. Now gently drain ( squeeze ) the sugar syrup from the rasmalai balls and then transfer them into the sweet ras. 

4. Put the Rasmalai  into the refrigerator for about 3 to 4 hours. Then garnish it with some chopped nuts

5. Your Rasmalai is ready to serve.
