This is a very easy to make Nihari (Pakistani Beef stew recipe).This is very tasty and flavorful. Tender mutton is cooked in a rich gravy which is then served with naan and khamiri roti. It is a very popular dish in South Asia and it is also the national dish of Pakistan.


Generally, bone in meat is slowly cooked with onions and Nihari masala. This dish is very spicy and full of flavors. It is a very popular dish in the whole South Asia. It also has many different variations such as Lahori Nihari, Karachi Nihari and many more.




What is Nihari?

Nihari is the a popular South Asian dish it is also the national dish of Pakistan. The word Nihari comes from the Arabic term Nahar which means morning. It was eaten as a morning  meal in the Mughal times. It is one of the best and most loved dishes in South Asia.

Ingredients:

For the Nihari:

  • 1 kg beef (bone in)
  • 1/2 cup of ghee or oil
  • 2 to 3 large onions (thinly sliced)
  • 2 tablespoon of ginger garlic paste.
  • 6 to 8 cups of water
  • Salt according to taste


For Nihari Masala:

  • 1 tsp fennel seed
  • 1 tsp cumin seed
  • 1 tsp black peppercorns 
  • 1 tsp coriander seed
  • 1 tsp cloves
  • 1 tsp green cardamom pods 
  • 2 to 3 bay leaves
  • 2 to 3 dried red chilies
  • 1 teaspoon nutmeg powder
  • 1 teaspoon mace
  • 1 cinnamon stick



Garnish:

  • Fresh coriander leaves (nicely chopped)
  • Ginger
  • Green chilies (sliced)
  • Lemon wedges

Instructions:

For Nihari Masala:

1. Dry roast some fennel seeds, cumin seeds, black peppercorns, cloves, coriander seeds, bay leaves, cardamom pods and some dried red chilies until they start giving aromatic smell.


2. Now wait until it gets cooled then grind it till it becomes a fine powder. Then mix it in nutmeg and mace then keep it aside.

For Nihari:

1. Take a large bottomed pot heat the ghee or oil in it.

2. Add few thinly sliced onions and fry until they become golden brown. Take few onions out for garnishing.

3. Add 2 tablespoon of ginger garlic paste in it and wait for a minute. Then add beef or lamb pieces  into the pot and cook until it becomes browned from all sides.

4. Take a separate bowl then mix wheat flour with water to form a smooth paste.

5. Add the wheat flour paste into the pot along with 6 to 8 cups of water. Stir well to mix it properly.
Then boil it in the low flame. Cover it and let it simmer until the meat becomes tender and stew become thickened.

6. If the Nihari have become too thick then you can add more water to attain the desired consistency.

7. Add salt according to taste.




 

Garnishing:

1. Garnish with fresh coriander leaves, golden brown onions and then squeeze a lemon on the top. Then serve it with fresh naan or khamiri roti.
